Fluids of light constitute a great platform to study collective effects in quantum systems such as Bose Einstein condensation or superfluidity. Here we present the production of pairs of correlated phonons in a Bose Einstein condensate of photons in hot atomic vapor, during a sequence of two interaction quenches. This opens a wide variety of experiments in which we study the correlation spectrum and entanglement properties of light in a time and space resolved manner using a balanced homodyne detection scheme.
